Say howdy to hash on Capitol Hill

The Corned beef hash & eggs at the Skillet Diner

The Corned beef hash & eggs at the Skillet Diner

History records the nation's first diner as a horse-drawn lunch wagon in 1870s Providence, R.I.

Later, in the early 20th century the Worcester Lunch Car Co. began manufacturing and shipping the pre-fab restaurants all over the country.  Other companies followed and an institution was born.

In this Food for Thought Nancy Leson reports on her soul-satisfying, waist-enhancing corned beef hash and eggs breakfast at Seattle's newest, the Skillet Dineron Capitol Hill.

It'll be a while before I get to Seattle to try her new discovery but in Tacoma where I live, my pick for great diner chow is Marcia's Silver Spoon on South Tacoma way.  Here's a Facebook link to some pix, inside and out.

"The diner is everybody's kitchen."
